As I've been experiencing issues with the beta version of TC I was wondering if downgrading to an earlier build is possible without losing any setting information etc.

Sadly no. If you downgrade, AIGTC will automatically try to upgrade to the newest version. You can, if you can get the hang of and older version, go offline, while AIGTC starts, and then go online again after it's started. That way it won't be able to check for updates. But it might be more of a annoyance in the long run.
Maybe you have the log files for AIGTC, so Kai can look at what might be the problem?
Then a followup question. People are still on 0.5*** and I'm currently on 0.7***. Is that something for MSFS or is that the low-ever version one that is still valid to use?
Then many of those people haven't downloaded the newest versions for a long time.. as 0.5 is very old now.

You are on the right version in that case. And no. It has nothing to do with MSFS or P3D or anything. all works on the current version
